800g potatoes, washed, diced into 2-3cm pieces
1 red onion, peeled, quartered and sliced
1 medium red capsicum, deseeded and quartered
20g balsamic vinegar
2/3 cup natural yogurt
1/2 tsp salt
1. Set basket in place inside mixer bowl. Add potatoes and 600g water. Steam for 18-20 minutes/steaming temperature/speed 4, until potatoes are tender. Set aside to cool. Discard water and give the bowl a quick dry.
2. Into mixer bowl, place onion, capsicum, rapadura and vinegar. Chop for a few seconds/speed 4/MC on – you don’t want to mush it, it still should have some texture to it. Cook for 10 minutes/100/speed 1/MC on.
3. Cook for a further 5 minutes/steaming temperature/speed 1/MC off.
4. Add yogurt and salt. Combine on 4 seconds/reverse/speed 4/MC on. Pour over the potatoes and gently combine until the potatoes are all coated in the sauce.
