Thermobexta’s Very Vege Slice

Vegetable SliceThis is something I came up with while completing my first Whole30. I needed a nourishing, delicious dish that I could keep on hand for times when I needed a meal fast. This really hits the spot and has been very popular amongst Whole30ers and non-Whole30ers alike.

150g zucchini, roughly chopped
120g sweet potato, roughly chopped
100g mushrooms
60g brown onion, peeled, halved
50g red capsicum, roughly chopped
40g spinach or silverbeet, stems removed
6 eggs
50g arrowroot starch or besan or spelt flour
1 tsp baking powder (optional)
2 tsp dried parsley
1 tsp odds and ends vegetable stock paste
1 tsp cracked black pepper

1. Preheat oven to 180°C. Grease a slice/quiche/pie dish.

2. Place all ingredients in mixer bowl. Chop for 20 seconds/speed 4/MC on, or until no large chunks remain.

3. Pour into prepared dish. Bake for 40 minutes, or until firm to touch.

4. Leave to cool for 5-10 minutes before cutting into slices. Serve warm or cold.

  1. This is delicious – hot or cold. Easy breakfast or lunch. I love it. I have varied the vegies slightly to what I have had available – but the sweet potato is what makes it divine!!

  3. Bec, I’ve made this twice in both my whole30s and love it for when I don’t have time in the mornings. Never bought the arrowroot or herbamere – its fine without. Thanks again.

  5. This tasted surprisingly good. I replaced the arrowroot starch with 100 g of self raising wholemeal flour. I would love if this could feed us over more than one night. I had to cut it up into 6 slices so we could save 3 pieces for the following night. Any suggestions on doubling the recipe without using 12 eggs. That seems a bit much. Loved it. Thanks for the recipe. So easy and quick to make.
