Guacamole is one of my favourite things to eat. Creamy, tangy, slightly salty, with a good dose of coriander-y goodness – perfection!
250g avocado flesh (2 large or 3 smallish avocados)
1 Roma tomato, halved and seeds scooped out then halved again
1 spring onion, cut into 1 inch pieces
1 sprig coriander, leaves and stems
20g lemon juice (approximately half lemon)
1/2 tsp salt
1 clove garlic
1. Place all ingredients in mixer bowl. Blitz for 1 second/TURBO/MC on. Scrape down sides of the bowl and push contents right down onto the blades.
2. Again, set to closed lid position. Blitz for 1 second/TURBO/MC on.
