20g spring onions, roughly chopped
3 x 3cm strips of lemon zest
10g parsley, leaves
1 carrot, roughly chopped
100g zucchini, roughly chopped
100g cauliflower, broken into florets
90g sweet potato, roughly chopped
60g broccoli, broken into florets
180g haloumi, diced into 1cm cubes
60g almond meal
40g arrowroot flour
salt and pepper, to taste
Ghee or extra virgin olive oil, for frying
1. Place the lid on empty mixer bowl and set to speed 8. Through the MC hole, add spring onions, zest and parsley. Leave running for 20 seconds. Scrape down sides of bowl.
2. Add carrot, zucchini, cauliflower, sweet potato and broccoli. Chop for 15 seconds/speed 5/MC on.
3. Add haloumi, eggs, almond meal, arrowroot and salt and pepper. Combine for 8 seconds/speed 4/MC on.
4. Melt some ghee in a large frying pan and drop in tablespoon amounts of the mixture. Fry for a couple of minutes before turning each fritter over and cooking the other side.
5. Serve warm or cold.
