Cheesy Savoury Muffins – Lunchbox Freezer Stash

These cheesy Thermomix savoury muffins are so quick to make! This makes them a great lunch, or afternoon tea.

They freeze and defrost well and my kids love them, so they’re something I often have in the lunch box drawer of my freezer.

Just two simple Thermomix Steps and these Savoury Muffins are in the Oven!

Please note, the full recipe is down the bottom.

After turning your oven on to 180C to pre-heat and preparing your muffin tray, place the first lot of ingredients into your thermal cooker. Blend 5 seconds/speed 6/MC on:

Greek yoghurt

Eggs

Parsley

Cheese

Spring Onion

Baby Spinach

Olive oil

Salt and Pepper

Next, you add flour, corn kernels and baking powder. Combine 10 seconds/reverse/speed 4/MC on.

Once that’s done, it’s just a case of pouring the batter into the muffin tray/s and baking for 20 minutes. So easy!

Can I make them Dairy Free?

I think that a lot of the appeal of these muffins is their cheesiness! That said, I think they would be ok subbing coconut yoghurt for the Greek yoghurt and replacing the cheese with a good dose of nutritional yeast.

I haven’t tried this variation and that’s why I haven’t included a dairy free variation on the recipe, so please let me know how you go if you try it!

Can I make them Gluten Free?

Yes. You can sub the flour for gluten free flour. The best gluten flour pre-mixed flour we have found is ORGRAN Gluten Free All-Purpose Plain Flour.

We have tested several Bexta recipes with a number of brands of gluten free flour and have always had the most consistent results with ORGRAN.

Can I leave out the spinach?

I’ve included a bit of spinach for nutrition in these muffins. The taste of it is undetectable. However, if your kids are ‘allergic’ to any signs of green in their food, you can leave it out.

What’s the best way to freeze these Thermomix savoury muffins?

For things like this, I space them out on a flat tray and put in the freezer. Once frozen, transfer to a large container or ziplock bag. Freezing on the tray first will prevent them from sticking together once frozen.

Cheesy Lunchbox Muffins

Simple to whip up and very appealing to kids, with the cheesiness and sweet bursts of corn, these are a great one to have in the freezer, ready to throw in to lunchboxes!

Ingredients

  • 240 g Greek yogurt
  • 75 g cheddar cheese diced 1.5cm
  • 40 g spring onion roughly chopped
  • 20 g baby spinach leaves
  • 20 g olive oil
  • 2 eggs
  • 1 sprig of parsley or 1/2 tsp dried parsley
  • 1/2 tsp salt
  • pepper to taste
  • 160 g unbleached white spelt flour or plain flour or ORGRAN gluten free all-purpose flour
  • 2 tsp baking powder
  • 100 g corn kernels fresh or frozen

Instructions

  • Preheat oven to 180°C. Grease a 12-hole muffin tray or place a silicon muffin form on a flat tray.
  • Place yogurt, cheese, spring onion, spinach, oil, eggs, parsley, salt and pepper in mixer bowl. Blend 5 seconds/speed 6/MC on. Scrape down bowl.
  • Add flour, baking powder and corn. Combine 10 seconds/reverse/speed 4/MC on, or until ingredients are just combined – do not over-beat.
  • Divide mixture evenly between the 12 holes in your muffin tray. Bake 20 minutes, or until muffins are golden and an inserted skewer comes out clean.
  • Turn out on to a cooling rack and allow to cool before freezing, or transferring to an airtight container.

Notes

Be careful, these are very moreish when warm – the melted cheese, the sweet bursts of corn…

How easy and tasty are these muffins! I didn’t have greek yoghurt so swapped for 200g sour cream + 20g water. I think the entire batch will be eaten in 1-2 sittings!

jUst made these. They are yummy. I didn’t have spring onion or spinich so just used red onion and put in a bit of coriander flakes as no parsley ! Unfortunately my kids won’t eat them which was my fear as they only like sweet muffins !! Frustrating. but more for me 🙂
