Thermobexta’s Fast Blueberry Sauce

Blueberry sauceThis is a sauce I make for my kids when they ask for pancakes or crepes. Made from ingredients that I always have on hand and so quick whip up, it’s a lovely addition and adds a little fruit to their otherwise fairly plain plates.

200g frozen blueberries
20g coconut sugar
1 scant tsp tapioca starch
1/2 tsp vanilla powder (or cinnamon)
1 strip of orange rind (optional but highly recommended)

1. Place all ingredients in mixer bowl. Cook for 4 minutes/100/speed 2/MC off.

2. Drizzle on to crepes or pancakes or porridge or Greek yogurt or anything that tickles your fancy.

  1. Wow!! This is too delicious. I usually make a sugar laden blueberry compote on the stove and I have to say this is far superior. I didn’t have any tapioca so I left it out, not sure what that does but I’m going to buy some and make it again coz if it gets better than it already tastes I can’t wait!
