ABC Nut Butter (Almond, Brazil Nut, Cashew)

Nut butter is so easy to make in the Thermomix! It’s a staple in our house and our favourite mix is A-B-C: Almond, Brazil nut and Cashew. You can pretty much use any combination of nuts you have on hand, though.

I buy all of our nuts (and most other pantry dry goods too) from Pistachios Organic Pantry here in Perth. I have no affiliation with them, but I do like to share other small businesses, especially local ones. All of their products are organic and the pricing is good.

What’s Needed to Make ABC Nut Butter in the Thermomix

With just six ingredients (and two of them are optional) this is a very simple recipe for a great nut butter.

Almonds, Brazil nuts and cashews: Nuts in general are a good source of protein, good fats and fibre. They’re a tasty, healthy, convenient snack as is, but blitzing them up into a nut butter such as this one makes a versatile way to get them into your diet.

Oil: Nuts are high in fats so you don’t need a lot of oil in this. Adding a small amount makes the nut butter a nice spreadable consistency.

Vanilla: Added purely for flavour, vanilla is not a traditional inclusion in a nut butter. It does add a lovely element to this and although it’s optional, I highly recommend you include it. It’s fine to use powder or extract. You could even scrape some seeds out of a vanilla pod into it.

Salt: A natural flavour enhancer, salt will bring sweetness out of the nuts and vanilla.

ABC Nut Butter (Almond, Brazil Nut, Cashew)

Totally additive free nut butter made from scratch by you. Just nuts, oil, vanilla and salt.

Ingredients

  • 180 g almonds
  • 100 g Brazil nuts
  • 100 g cashews
  • 30-50 g oil of your choice I use macadamia oil
  • 1 tsp vanilla powder or 2 tsp vanilla extract, optional
  • 1/2 tsp salt optional

Instructions

  • Place nuts in a medium-sized frying pan. Toast for 6-8 minutes, until lightly browned. Be sure to toss the nuts regularly to ensure they don’t burn.
  • Transfer toasted nuts to mixer bowl. Add 30g oil, vanilla and salt. Blitz 3-5 minutes/speed 9/MC on, pausing roughly every 30 seconds to scrape down sides of bowl. Add 10-20g of the remaining oil if necessary after a couple of minutes of blending.
  • When oils have been released from nuts and texture of the nut butter is smooth and spreadable, transfer to a clean jar. Store in the fridge.

Notes

You may like to add a little sweetener to this – a teaspoon or two of honey is my favourite but any type of sweetener will work nicely.
