Thermobexta’s Chocolate Self Saucing Pudding


Chocolate self saucing pudding was the really special dessert we occasionally had whilst growing up. Mum used to make it every now and then and when I moved out I took a copy of her recipe. I’ve made it a few times and every time I do it brings back fond memories of eating it as a kid. Last night I decided I’d take it upon myself to try my best at a gluten free version of that sweet, chocolatey goodness, being that I have quite a few GF followers and well, I wanted chocolate pudding and felt like having a play with mum’s recipe. Thermobexta’s Sticky Lime and Coconut Cake

Well this was a throw together after realising I had no food in the house to feed my kids for afternoon tea today. I had a bowl full of limes and started thinking about good combinations. Lime and coconut won and this little beauty was born. I’m going to say it is possibly even better than my Brilliant Blueberry Lemon Loaf and I really love that one.

Thermobexta’s Little Lemon Tarts

Here is a fabulous use for all the lemons around when trees are fruiting.  It makes enough curd to fill approximately three batches of the tart bases.  I designed it this way so you can either make a batch of tarts and have curd left over to stir through yogurt, have on toast or crackers, or use however you normally like it use it, or if you prefer you can make multiple batches of the bases to use it all up at once.
