Thermobexta’s Smashed Eggs

This is a very simple idea that works well with any mix of veg you have on hand. I use it as the filling for wraps with some shredded lettuce, or sometimes skip the wrap and stuff it in a cos lettuce leaf and my kids sometimes have it in sandwiches. When I was talking to my sister about it the other day, she asked if it would work as a dip, which is a great idea that I hadn’t thought of – perfect for lunch boxes! Thermobexta’s Festive Couscous Salad

This is a vibrant and flavoursome salad great for any time of the year, but a particularly good one for Christmas!  It can be made a day or two in advance – keep the dressing separate until just before you’re ready to serve.

Sesame Pumpkin Salad

No Thermomix necessary for this one! Even though it is used to make the dressing, those without can make it by simply crushing the garlic and shaking all ingredients vigorously in a jar.

400g pumpkin, peeled, deseeded and diced into 1.5-2cm cubes (peeled weight)

1-2 tbs macadamia oil (or oil of your choice)
