Tomorrow is the day I release my second cookbook for pre-sale – Summer Meal Mix Up! It’s a very exciting time and I know that many of you can’t wait to get cooking from it, so I’m sharing the ingredients for one of the salads in the book – Maple-roasted pumpkin with walnut dukkah. This way, you can have everything on hand to make it as soon as the eBook hits your inbox! Continue reading Thermobexta’s Maple-Roasted Pumpkin with Walnut Dukkah
This is a very simple idea that works well with any mix of veg you have on hand. I use it as the filling for wraps with some shredded lettuce, or sometimes skip the wrap and stuff it in a cos lettuce leaf and my kids sometimes have it in sandwiches. When I was talking to my sister about it the other day, she asked if it would work as a dip, which is a great idea that I hadn’t thought of – perfect for lunch boxes! Continue reading Thermobexta’s Smashed Eggs
This is a great vegetarian side dish. The fresh sweetcorn, along with plenty of coriander, lime juice and garlic make it a fresh addition to any meal. Continue reading Thermobexta’s Corn & Butter Bean Salsa
There is a greatly improved, more streamlined version of this recipe in my cookbook, Summer Meal Mix Up, which you can find here.
This is a vibrant and flavoursome salad great for any time of the year, but a particularly good one for Christmas! It can be made a day or two in advance – keep the dressing separate until just before you’re ready to serve.

I have a new favourite salad and this is it! It’s a salad meal, nothing else needed. Unlike a traditional Nicoise, in that my version doesn’t have tuna in it, but if you eat fish and want it more traditional you could add a tin of tuna. Continue reading Thermobexta’s Salad Nicoise
This is an awesome version of coleslaw, just a bit different to the rest! Naturally sweetened with pear, though, you won’t pick it’s in there. Continue reading Thermobexta’s Sesame Slaw
Serves 2-4 as a side
1 strip lemon zest
1 small garlic clove Continue reading Thermobexta’s Zesty Zucchini Salad
No Thermomix necessary for this one! Even though it is used to make the dressing, those without can make it by simply crushing the garlic and shaking all ingredients vigorously in a jar.
400g pumpkin, peeled, deseeded and diced into 1.5-2cm cubes (peeled weight)
1-2 tbs macadamia oil (or oil of your choice)
salt and pepper Continue reading Thermobexta’s Sesame Roast Pumpkin Salad
This is a fresh tasting pasta salad, perfect for a barbie or picnic!
1/4 cup (tightly packed) parsley, leaves only
3 strips lemon zest
1 clove garlic Continue reading Thermobexta’s Summer Pasta Salad
There is a very popular Thermomix-made raw beetroot salad, which I quite like. But when I have a bit more time up my sleeve, I much prefer my version. I hope you like it too 🙂 Continue reading Thermobexta’s Better Beetroot Salad
