I took it upon myself to come up with a yummy onion soup recipe, as I thought it would be great to offer you guys another use for the sherry you purchased to make the Mushroom Stroganoff in Main Meals Made Easy… Not that I doubt you could easily use a bottle up making delicious stroganoff for dinner on a weekly basis, but it’s nice to have options šŸ™‚ This took me quite a few tries to get just right, but I’m really glad I persisted – I hope you are too. Thermobexta’s Smashed Eggs

This is a very simpleĀ idea that works well with any mix of veg you have on hand. I use it as the filling for wraps with some shredded lettuce, or sometimes skip the wrap and stuff it in a cos lettuce leaf and my kids sometimes have it in sandwiches. When I was talking to my sister about it the other day, she asked if it would work as a dip, which is a great idea that I hadn’t thought of – perfect for lunch boxes!
