Nut butter is so easy to make in your thermal mixer. It’s a staple in our house and our favourite mix is A-B-C: Almond, Brazil nut and Cashew. You can use any combination of nuts you have on hand, though.

I bought a bottle of avocado oil a long time ago after hearing how good it is in mayonnaise. It was soon lost and forgotten in my small, overfull pantry, until recently. I made this mayonnaise the other night when I decided to make sushi for my girls’ lunch boxes and realised I had limited filling ingredients – a flavoursome mayo was essential. This turned out even better than expected! The oil I used was lime infused, which added another fantastic element and if you can find the same one, I highly recommend it. If not, a plain avo oil will be fine, but I would suggest increasing the apple cider vinegar a little if so. I know that I have a couple of popular jam recipes here on my blog, but I’m going to have to say this – this fig jam is the best one! I have used honey as part of the sweetener (you can’t use it as the entire sweetener unfortunately) and the spices add such a lovely, warm flavour. The lemon makes the flavours really ‘pop’ and adding it towards the end means it doesn’t change the consistency too much.
