Mushroom Stroganoff with Whipped Sweet Potato Mash

contents releaseBefore the release of my first cookbook – Thermobexta Main Meals Made Easy, it was suggested in my Facebook group that I release the ingredients list of one of the recipes so people could be prepared with ingredients on hand to get cooking as soon as their eBook hit their inbox! So I put it to the people and the resounding winner of the popularity contest was this utterly delicious, super satisfying all-in-one meal. Great choice! Though, all of the meals I’ve chosen to include in the book are extremely good, so any choice would have been great (contents on photo above).

medium dry sherry
sour cream (replace with coconut cream if dairy free)
tomato paste
odds-and-ends vegetable stock paste
mild paprika
dijon mustard
bay leaf
flat mushrooms
Swiss brown mushrooms
sweet potato
stringless green beans
Himalayan salt
plus 400g beef strips for those wanting to make the meat variation

  1. I christened this “Mushroom Bliss” the first time I made it. The flavours are rich and earthy, and the sweet potato mash is heaven. The fact that I haven’t tried the “make it meaty” version speaks volumes. My family loves it just as the recipe is written xxxxx


  2. This meal is simply mouthwatering in its entirety 🙂 2 children that don’t like mushrooms devoured it which speaks volumes! So easy and so filling 🙂


  3. I LOVE this recipe! It was the first I made when I purchased the book and has been a regular ever since. Even my two picky kids love this and didn’t even comment on the mushrooms for a change. Definite winner and would recommend to anyone.
